ON-SITE CIDER PLANT

The project of making the first hard ciders in the Outaouais region
began in the fall of 2007 when building a cider plant on the site of
our orchard.   We wanted to diversify our farming activities by
processing some our apples.

We make hard ciders from a judicious choice of apples with the
aim of reaching tastes that are unique and would be appreciated
by people living nearby. Because of the broad range of apple
varieties we grow, we believe that we can make high-quality hard
ciders with specific characteristics.

Where to purchase our hard ciders

Currently they are available only at the farm.  If you are interested
in purchasing quantities, arrangements can be made for delivery at
your location.  If you want to order, please give us your name and

Croque-trémousse

This is a sparkling hard cider.  To make this cider, we have increased the
density of the apple juice by extracting water so that the level of alcohol
reaches 9%.  If no water is extracted, the level of alcohol of a hard cider is
naturally around 5%.  This cider is light, moderately sweet, and clear
yellow.  It has an apple-taste and some bitterness.   Served cold, it goes
well with pancakes, fish, white-flesh meats, white sauces, and desserts.  
This is also a good cider to have if you are planning a brunch.

A 750 ml bottle is sold for $12 (including taxes).

Croque-et-tombe

This an aperitif cider.  To make this cider, we have also increased the density
of the apple juice by extracting water, therefore increasing the level of alcohol
to 15%, we have also added Calvados (alcohol made from cider).  Like a port wine,
this cider is sweet and thick.  You can feel the taste of apples and the gold color
makes it very attractive.  It can be served as an aperitif, a digestive or with
cheeses, chocolate, desserts with strong tastes, and ice cream.
